Ingredients:
2 racks of pork ribs (about 1.5–2 kg total)
2 tbsp olive oil
1 tbsp sea salt
1 tbsp brown sugar
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
½ tsp cayenne pepper (optional)
1 cup BBQ sauce
Method:
Prep the ribs: Remove the thin membrane from the back of each rack (this helps them become more tender). Pat dry with paper towel.
Rub it in: Combine salt, brown sugar, paprika, garlic powder, onion powder, pepper, and cayenne. Rub evenly over the ribs, then drizzle with olive oil.
Marinate (optional): For deeper flavour, cover and refrigerate for 2–3 hours, or overnight.
Slow cook: Preheat oven to 160°C . Wrap each rack tightly in foil and place on a baking tray. Cook for 2½ to 3 hours, until the meat is tender and starting to pull away from the bones.
Glaze and caramelise: Remove from foil and brush generously with your BBQ sauce. Increase oven temp to 220°C and cook uncovered for 10–15 minutes until sticky and slightly charred.
Rest and serve: Let the ribs rest for 10 minutes before slicing between bones. Serve with coleslaw, corn on the cob, or crispy fries.
