🥣 Creamy Mustard Sauce for Pork

Ingredients:
1 tbsp butter
1 small shallot or ½ onion, finely chopped
1 clove garlic, minced
1 cup thickened cream (or cooking cream)
1 ½ tbsp Dijon mustard
1 tbsp wholegrain mustard
1 tsp Worcestershire sauce (optional)
1 tsp honey (optional, to balance flavour)
Salt and cracked black pepper, to taste
Fresh parsley or thyme, chopped (for garnish)
Method:
Sauté aromatics: Melt butter in a small saucepan over medium heat. Add shallot and garlic, and cook until soft and fragrant (about 2 minutes).
Add cream and mustards: Stir in the cream, Dijon mustard, and wholegrain mustard. Mix well to combine.
Season and simmer: Add Worcestershire sauce (if using) and a drizzle of honey for sweetness. Reduce the heat and let the sauce simmer gently for 3–5 minutes, stirring often, until thickened slightly.
Taste and adjust: Add salt and pepper to taste.
Serve: Spoon the warm sauce over pork chops, tenderloin medallions, or roast slices. Garnish with parsley or thyme.
