🥢 Easy Pork Stir-Fry

Ingredients:
500 g pork (tenderloin or fillet), thinly sliced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp honey or brown sugar
1 tsp sesame oil
2 tsp cornflour (cornstarch)
2 tbsp vegetable oil
1 clove garlic, minced
1 tsp fresh ginger, grated
1 small onion, sliced
1 red capsicum, sliced
1 carrot, julienned
1 cup broccoli florets
Optional: 1 fresh chilli, finely sliced (for a kick!)
Method:
Marinate the pork: In a bowl, combine soy sauce, oyster sauce, honey, sesame oil, and cornflour.Add the pork slices and mix well. Let sit for 15–20 minutes to soak up the flavour.
Cook the pork: Heat 1 tbsp oil in a wok or large frying pan over high heat. Stir-fry the pork in batches for 2–3 minutes until browned but not overcooked. Remove and set aside.
Cook the vegetables: Add the remaining oil, then stir-fry garlic, ginger, onion, and vegetables for 3–4 minutes until just tender-crisp.
Combine and finish: Return the pork to the pan, toss everything together, and add a splash more soy or oyster sauce if needed. Stir-fry for 1–2 minutes until everything is coated and glossy.
Serve: Serve immediately over steamed jasmine rice or noodles. Garnish with sesame seeds or fresh coriander if you like.
