🥢 Easy Pork Stir-Fry

Ingredients:

  • 500 g pork (tenderloin or fillet), thinly sliced

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp honey or brown sugar

  • 1 tsp sesame oil

  • 2 tsp cornflour (cornstarch)

  • 2 tbsp vegetable oil

  • 1 clove garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 small onion, sliced

  • 1 red capsicum, sliced

  • 1 carrot, julienned

  • 1 cup broccoli florets

  • Optional: 1 fresh chilli, finely sliced (for a kick!)

Method:

  1. Marinate the pork: In a bowl, combine soy sauce, oyster sauce, honey, sesame oil, and cornflour.Add the pork slices and mix well. Let sit for 15–20 minutes to soak up the flavour.


  2. Cook the pork: Heat 1 tbsp oil in a wok or large frying pan over high heat. Stir-fry the pork in batches for 2–3 minutes until browned but not overcooked. Remove and set aside.


  3. Cook the vegetables: Add the remaining oil, then stir-fry garlic, ginger, onion, and vegetables for 3–4 minutes until just tender-crisp.


  4. Combine and finish: Return the pork to the pan, toss everything together, and add a splash more soy or oyster sauce if needed. Stir-fry for 1–2 minutes until everything is coated and glossy.


  5. Serve: Serve immediately over steamed jasmine rice or noodles. Garnish with sesame seeds or fresh coriander if you like.
